Banana and Blueberry muffins

This is a twist of the Nigella Lawson Banana and Butterscotch Muffins:

The changes are underlined…

Makes: 12 muffins

Ingredients

3 very ripe bananas
125 ml vegetable oil (100ml of oil + 50g of melted butter)
2 large eggs
250 grams plain flour
100 grams caster sugar (replace the sugar by Zest and Juice of an orange)
½ teaspoon bicarbonate of soda
1 teaspoon baking powder
150 grams butterscotch morsels (or chocolate) (replace by blueberries 300g, or other fruits of your choice) - covered the washed blueberries in a little flour, so they won’t fall on the bottom.

Method

1. Preheat the oven to 200°C/gas mark 6/400°F (180°C) and line a 12-bun muffin tin with muffin papers.
2. Mash the bananas and set aside for a moment. + add the zest of an orange and the juice
3. Pour the oil into a jug and beat in the eggs. You can add some butter and less oil to add more test of the muffins.
4. Put the flour, (sugar), bicarbonate of soda and baking powder into a large bowl and mix in the beaten-egg-and-oil/butter mixture, followed by the mashed bananas.
5. Fold in the blueberries (butterscotch morsels), then place equal quantities in the prepared muffin tin - I use an ice cream scoop and a spatula - and bake in the oven for 20 minutes. (no more!)
