Banana Bread - the ultimate comfort food



300g plain flour
100g granulated sugar
3/4 tsp bicarbonate of soda
1/2 tsp salt
3 very ripe bananas, mashed with a fork
100g plain yoghurt
2 large eggs, beaten lightly
90g butter, melted and cooled
1 tsp vanilla essence


1. Grease and flour the bottom of a loaf tin then preheat your oven to 180'C (fan 160'C), 350'F or Gas Mark 4.
2. Next, sift together the flour, sugar, bicarbonate of sugar and salt in a large bowl and set it aside.
3. In another bowl, mix the mashed bananas, yoghurt, beaten eggs, butter and vanilla essence with a wooden spoon.  You can use a food mixer if you wish.
4.Once these ingredients have been combined, they need to be folded into the dry ingredients with a spatula.  
5.Once you have a thick, chunky batter, scrape it into the prepared loaf tin and bake for about 55 minutes.  A good test for ensuring that it has cooked through is to insert a cocktail stick into the centre of the loaf.  If it comes out clean the loaf is cooked.
6. Leave it to cool for 5 minutes in the tin and then turn it out onto a wire rack.  

Eat warm straight away, cold, or warmed in the toaster with or without butter!
